It's amazing how much hate is for this armor, as "CASULS" and "NOOBS" keep using it.
Why does anyone care? It's just a game, if they want to R1 the Dark Sword or Estoc for days, let them. It's not your problem nor mine.
I enjoy this game, cause it's a challenge and the PVP aspect is fun. And since the Ringed City DLC is coming out soon, I started a new journey with this guy and surprisingly found a rather interesting replacement for the pissy pants of the set.
Assassin Gloves and Leggings.
Looks even better. And no, no actual build, just your casual adventurer tools, Shield of Want and Longsword.

I love the fallen knight armor set, it looks cool and the cape reminded me of bloodborne.
I used it for my knight character (equipped with hollow slayer great sword\standerd knight shield) when I started playing dark souls 3 for the first time. And boy oh boy. What a great game just like bloodborne.
So far I have two knights, a mercenary (with pyromancy), and a herald (with a badass great lance). But, when the time is right. I'll plan to create a new mercenary class for samurai build (katanas and great bow the Oni slayer) with eastern armor set for an authentic samurai look. As well a sorcerer class, casting spells and using the legendary moonlight greatsword.
If you have free time, check my Youtube channel and see the first two videos of DS3. It not the perfect playthroughs, but at least I don't suck so bad like DSP. (dark side phill)
